Last Sunday, we visited Loving Hut Smile vegan restaurant in Seoul, Korea. Specializing in catering and lunch boxes, this Loving Hut is a popular vegan restaurant frequently catering to celebrities. This morning, Loving Hut Smile is busy making lunch boxes ordered by its customers who are going on a picnic. “After cutting the bread in half, spread the vegan cheddar cheese on both sides. Next, put a piece of Romaine lettuce and add the (fried) vegan bacon then add one slice of organic tomato. Squeeze some apple sauce onto the sliced tomato.” “It’s a mini sandwich.” “Then add about three fresh cherry tomatoes, two strawberries and half a tangerine and some organic blueberries on top of the lettuce.” “Next, I'll add some vegan chocolate chip cookies, and this completes the Evening Roll Lunch Box." “I think it would be better to cut about two pieces of Romaine lettuce. Put it to one side and lay it down first. Then add the young leafy vegetables, organic red bell pepper and yellow capsicum.” “Then cut the rice cutlet and put it in the box.” “In the box, add the rice ball and the pickled radish on top of the lettuce.” “Squeeze some (apple) sauce onto the rice cutlet and also squeeze some mustard on top of it.” “The Quick Vegan Lunch Box is now complete.” One of the most popular menu items at Loving Hut Smile is the fried soy vegan chicken. To make this recipe, boil some thick dried soy protein in water and then cut them lengthwise with scissors. Squeeze the excess water from the soy protein and then season it with sesame oil, dried parsley, ground pepper, salt, and vegan seasoning. Coat the soy protein with frying powder and deep fry it in sunflower oil. Remove it from the oil once the soy vegan chicken turns golden brown. The two friends are going on a trip to a tourist destination called Water Park by train at Namyangju. Soon it was lunchtime, and they stopped to take a rest at a shady picnic area to enjoy their wonderful vegan lunch while appreciating the peaceful surroundings.

Today, it is our privilege to feature more excerpts from our interview with John Jezewski. Mr. Jezewski is more than just a nutritionist. He is a living nutritionist and provided us with a background on how he assists people through his practice. “Living nutrition is taking the absolute latest technology and also taking techniques of enthusiasm. So people can make a proper transition to a perfect diet for them. And we’re talking about making that part of your living, part of your life.” “And helping you with supplements, with tonic herbs, and how to do exercises, when to do exercises, how to treat all these different conditions, what you can do to help that particular condition.” As Mr. Jezewski just mentioned, he recommends appropriate dietary supplementation to his clients. His view is that if our focus is to improve our bone density, the intake of plant sources of silica is the intelligent choice. “Good calcium you get from plants. You get calcium from green food basically; you eat lots of that. For bones, you need the silica, not the calcium. You need nettles; you need hemp leaf tea. You need to eat hemp; you need to eat things like nettles, hemp.” “That, with vitamin D, the sunshine, is fantastic. And then, magnesium. That, again, you get from your plants.” “a tonic herb has got no side effects, by definition. It wouldn’t be a tonic herb. So you can take that, and it works internally, and it raises consciousness. It doesn’t suppress any symptoms; it brings them out; it gets rid of them.” Introducing plant-based eating to his clients is part of Mr. Jezewski’s living nutrition practice. He is encouraged by the trends he sees worldwide in terms of the awareness that veganism is the key to wellness.

Today, he will show us how to make upma, a thick porridge meal in India. "So, first, we peel and dice the carrot, and then we peel and dice the potatoes, and we deep fry them. After we deep fry them, we will take them out and then prepare the semolina. Here we have 250 grams of oil that we are going to use for deep frying. So, we’ll warm up the oil a little bit first, and once it is a little bit warm, we will start putting the carrots. As we take a closer look at the carrots, they have changed color, and they look like they are almost fried. This is the point of time we take out the carrots and reduce the fire. Now we’ll put in the potatoes to continue frying. We don’t need to make it too brown and hard and crispy, it’s almost cooked, so it’s time now we remove the potatoes from the fire. And at the same time, we need to reduce the fire, so that it won’t be too hot for the soya beans (edamame). As you look at the completion of the soya beans, it’s puffed up. We have been cooking it for approximately two minutes to two and half minutes now, depending on the flame that you are using. Now we’ll take another pot or pan. This is when we put the salt; ten grams, water, and the curry leaves and start to boil it. And now we switch. First, we take back some oil that we had earlier, and then we put in the semolina and start to sauté it. We have to constantly stir this for five to seven minutes until it starts changing color, a little bit brownish. So, we turn off the fire and then clear up all the semolina into the center. And now we add this boiling hot water into the semolina. You will notice, the water is now getting absorbed by the semolina. We still have a little bit more water left on the surface, and this is the point of time we add in all our vegetables for an easy mix. In this way, everything is evenly mixed and evenly assorted, so every bite will contain vegetables and semolina together. And now we are almost at the final stage of the semolina, where we put the cashew nuts. Now, we have a delicious upma ready to be served." Now, Chef Ravi will make Chocolate Upma. "So, for that, we need the same quantity, 1100 cc of water that’s 1.1 liters and 150 grams of sugar. Now we need to let the water boil and keep the fire on maximum heat if possible. So as you can see, the water is boiling right now, and we are going to take it off and put it on the wooden board so it doesn’t damage the table. Turn off the fire. Give it a quick stir to dissolve the sugar into a syrup. And now we will add in forty grams of cocoa powder, straight into this, and mix. We’ll bring back the semolina onto the gas stove and pour in this hot liquid. Give a quick stir to take off any excess chocolate. As you can see, the water is almost dried up, and it’s now time to serve this delicious chocolate dish."

And the location of these symptoms will tell us where the problem is.” According to Ms. Wong, there are different “control panels" within us, including the ears, eyes, hands, and feet. She developed the Healing by Design Self-Care Method to show people how they can easily cure various illnesses, pains and discomforts. “I want to first help them recognize that these parts of their body have these special abilities to let them check what's going on in their body ahead of time before they are experiencing discomfort or pain, or any health challenges. Because it's so simple, I want to teach kids early in their lives. My dream is that all the children will grow up learning this as a life skill that their parents would teach them, just as common as brushing their teeth every day." "My new definition of what optimum health is, is when not only the ear, but in all your control panels in your body, you cannot find any pain. And that is the best measurement that someone is in optimum health. I believe that your inner healer has an expectation of you, based on your genes, your own lifestyle, your habits, your diet, everything combined makes what optimum health is for you. So, it is definitely a new concept." Ms. Wong has been a vegetarian for more than 25 years and vegan for the past eight years. “Through our non-profit, I teach people about the importance of the vegan diet. If they want to reach optimum health, this is a necessary, a central part and that is definitely, absolutely necessary.”

We spoke to Selene in early February, 2020, at the Plant Powered Expo in London, where we were so excited to learn about her new book Yes Ve-Gan! Let’s hear what she had to tell us about this exciting time in her life. “So my new book Yes Ve-Gan! was published a month ago and it’s a blueprint for vegan living, so it’s letting people know how they can make the change and also explaining why you would want to; so it does cover the three main points: health, the environment and animals. But the reason why I really wanted to write it was because I wanted to communicate the joy of veganism; how happy it makes you, just something I never anticipated.” “The biggest shock I had when I went vegan was how much I loved it and that’s something that I see reflected all the time in other vegans. Every vegan I know says their only regret is not doing it sooner and I think there is a reason for that.” In 2018, Selene found herself in the middle of a public media storm when William Sitwell, the editor of a highly respected publication, Waitrose Food magazine, ridiculed her pitch to publish a series of vegan recipes. The email mocking vegans made headlines prompting lots of conversations on mainstream news media. In the midst of the storm, Selene had the opportunity to meet with the editor and talk about veganism, which reached over 650 million views online. Looking back at this episode in her career, Selene said, “I definitely didn’t expect that reaction from the editor. But I also never could have anticipated how big the story became and how angry it made some people. And I did already know that veganism was a highly divisive subject, but what that issue really brought home was the fact that eating animals, or not eating animals, is an extremely contentious issue.” In fact, one year later, William and Selene ended up on the cover of ‘The Telegraph Magazine’ talking about veganism. The beloved Supreme Master Ching Hai applauds all the vegan media in the world, and had this to say at a climate change conference in Washington DC. “The media has a very important role in our society, everybody knows that. Vegan Chef Ravi G. Dadlani grew up in Mumbai, India. After he graduated from college in 1988, he started work in Taiwan, also known as Formosa, and has been living in Taiwan ever since. With encouragement from his relatives and friends, he opened the first all-vegan bakery café, “Fresh Bakery and Café,” in Taipei, Formosa in 2012. Then in 2016, he relocated the cafe to a more convenient location and renamed it as "Vegan Taipei." Let’s now watch Chef Ravi make an authentic Indian cuisine step by step. "Today, we are going to cook the most common dish in the Indian household: Mixed Vegetable Curry Rice & Indian Masala Chai." "In our busy daily life, we do not have time to cook food everyday. So today, we will be preparing a big pot of curry that could be stored in the fridge for up to 2-3 days. So now, we’ll start preparing the food." "Now we have finished dicing all the vegetables." "First, we heat the oil a little bit on medium to low fire. And we start putting in all the spices: the curry powder, coriander powder, cumin powder, salt, turmeric, and red chili powder. We sauté this for about two minutes." "Notice the spices are starting to get a little bit brownish, so it’s about time to start adding the other ingredients, but we need to add them one at a time." "We need to constantly stir it every two minutes or so, so that it doesn’t burn at the base." "The portion of the gravy and the vegetables has to be 1:1 when serving. This is the best way to eat curry." Now, vegan chef Ravi is going to show us how to make a delicious vegan Indian milk tea, known as Masala Chai, using Indian spices. "We are going to cook vegan Indian masala chai. The ingredients are nutmeg, dried ginger, cloves, cardamom, black pepper, and cinnamon…"

Selene Nelson is an author, freelance journalist and vegan activist. Her latest book, Yes Ve-Gan! is a well written guide on how and why to go vegan. Selene Nelson was a vegetarian up to 2017, when she made the transition to veganism. Let’s find out what motivated Selene to make such a change. “What motivated me to become vegan was my love for animals, first and foremost. I was already vegetarian, when I went vegan, because I’d seen slaughterhouse footage and I thought I just don’t want any part of that but it’s very easy to look away from the dairy industry and the egg industry. I did that very successfully for quite a few years and it got to a point where I couldn’t look away anymore and I confronted the reality of these industries and once you see the footage and you are aware of how awful it is, I realized I would be just a real hypocrite if I decided dairy cows didn’t matter in the same way I thought beef cows did. So, it was just a decision I felt compelled to make.” “I wanted to travel and just experience life and it was that travel experience that made me become vegan. As soon as I did, I felt like I wanted to spread the message of veganism and let people know the reality of animal agriculture and allow people to make up their own minds, because I didn’t know any of that stuff before I was vegan and I think if I had that information I would’ve made the switch sooner, so I kind of felt it was my duty or my calling as cheesy as it might sound to actually use my journalism to spread that message.” Selene writes about the three main reasons for veganism: health, the environment, and animal ethics. Having travelled so extensively around the world, she shared with us how the vegan movement was reflected in all the various countries and cultures plus the reasons to motivate the success of veganism around the world. “I think definitely in the UK and the US there has been a strong interest in the health side of it, particularly recently. You have documentaries like the Game Changers on Netflix that are really popular and getting people to understand that vegan diet is not only healthy but it can actually be the best diet for you.”

Today, we joyfully present Supreme Master Ching Hai’s “Mushroom Tofu & Chayote Soup.” “Today, we’re going to cook something very simple and easy. OK, we need mushrooms, coriander, pocket tofu, a sweet pepper, one piece of tofu, and chayote. And we need for seasoning: paprika, mushroom seasoning, Maggi or soya sauce.” “I’m going to cook with it now. To begin with, you crumble this tofu. You use your hand to squash it into a very fine kind of substance.” “Whatever we have here, we chop them.” “You put some water into this pot, about half of the pot. Half of that Medium-sized pot, and I’m going to turn the oven on maximum and let it boil. You can already add a little salt in it.” “You can even put soya sauce in already, about one tablespoon. And you put one teaspoon or half of a tablespoon of mushroom seasoning and leave it there. You put half a tablespoon of brown sugar and let it boil.” “All you do is put everything in a pot." "And now, I put all this in as well, the pepper and the chayote. That’s it. Stir a little bit and let it continue boiling for just five more minutes.” “You can use some oil, put it in the pan, like two tablespoons is fine.” “So we better put the mushroom in already." "And stir it a little.” “You just fry the mushroom for like one or two minutes, and then you put the tofu in.” “Now I put the coriander in the Tofu Mushroom.” “Now I put a little bit more Maggi or soya sauce, depends on what you like.” “Now it’s done. It is becoming increasingly clear that hurricanes, typhoons, and tropical cyclones around the world are becoming stronger and potentially more deadly as the planet warms due to the climate crisis. On May 20, 2020, it was reported that Amphan, the strongest cyclonic storm since the 2007 season, had made landfall along India’s east coast and in Bangladesh. With wind speeds gusting to more than 240 km/h (150 mph) the cyclone wreaked havoc as it raced inland, disrupting power supplies to about 5.5 million homes, and causing high tidal surges and a chaotic mess along the coast. The storm prompted Bangladesh to evacuate about 2.4 million people to shelters, while in India’s West Bengal, 500,000 people had to rush to safer locations. On numerous occasions, our beloved Supreme Master Ching Hai has stated that the most effective way to stop global warming is through widespread adoption of the vegan lifestyle. “We must, first of all and the most important thing, we have to stop global warming by choosing a sustainable diet that is vegan. This will almost immediately stabilize the planet, the weather, and then we can think about adapting to the changes. I hope we don’t have to adapt, but otherwise, it might be too late if we don’t take care of the problem at the root right now.” “You know, being a leader, you are supposed to lead people into the right direction, if you already know what’s good for them. It’s your duty. But it doesn’t seem like they’re doing much, or not fast enough, because they know for that piece of meat, if people continue to consume it, then the children and the other people, children, women, men, animals on this planet are going to be harmed, hurt or killed or maimed. And the other further generations, their children, their grand, grand great grandchildren, will be burned in such an inferno because of climate change due to meat consumption, meaning the meat industry. So, I don’t know why they hesitated so long, not to talk about Heavens and hells and punishments, rewarding, nothing else. As a human, we have to take care of each other, take care of other humans and animals, the weaker, lesser beings, by doing what is appropriate to protect us and protect them. For God’s sake!”

Seth quickly realized that such a company will have a far-reaching and globally significant impact on reducing the exaggerated reliance on animal agriculture and also protect the environment. “And what I found, is people don't have an innate need to kill animals; that's not an imperative, but survival and nutrition are. So, if we can create plant-based alternatives that taste as good, then we see a very good response. What’s so exciting to see consumers are choosing this approach. So I’m excited to see it’s happening. Today, Dr. Goldhamer will continue to share his wisdom on progressing to a healthier lifestyle. Skipping one or two meals in a day is easily attainable, but when it comes to truly long periods of purposely not eating, this is a different matter and requires careful guidance. “I might want to point out that fasting is done by everyone. Everybody fasts when they go to bed at night and they don't eat, for whether it's 6 hours, or 8 hours, or 10, or 12, or even as we often recommend 16 hours, people are fasting. And so now the question is, ‘What about with intermittent fasting? What if we narrow the feeding window which is often recommended?’ So by not eating 3 hours before you go to bed, let's say you don't eat after, say, 6 o'clock and you don't eat breakfast, say, before 9 am, now you've got a period of anywhere from 12 to 16 hours, depending on the specifics, where you're fasting, and some have suggested that even that brief period of intermittent fasting is enough to induce hormone changes and other changes over time, cumulatively, that may have health-promoting benefits. It's also possible by narrowing the feeding window to 8, or 10, or 12 hours a day that you may tend to eat less." "Fasting can create an environment where the body can get rid of pathogenic bacteria in the gut. You have 5 pounds (2.26 kg) of bacteria living in your intestinal tract right now, maybe 1,000 different strains. These are living creatures, living, eating, drinking, and defecating inside you right now. So, you have 5 pounds (2.26 kg) of bacteria pooing inside your body as we speak, and what your body poos inside you will depend on what you feed them. So, if you want those bacteria pooing trimethylamine oxidase into you and increasing your risk of heart disease and cancer, people may choose to eat meat. If you want to have your bacteria pooing fertilizer into you, including vitamin K and other things, then I would recommend a whole plant food diet, particularly starchy vegetable materials."

Apart from heatwaves and wildfires, climate change has also triggered many other extreme-weather events, including intense storms, floods, and blizzards. For example, a series of recent winter storms in the United Kingdom and other parts of Europe led to severe downpours, floods, high tides, and other extreme weather events. The first storm, Atiyah, swept across the Republic of Ireland on December 8, 2019, with wind speeds of up to 80 mph (130 km/h). Rough seas along the west coast of Ireland were also produced by the storm. After Atiyah, Storm Brendan battered the UK on January 14, 2020, bringing rain and wind gusts of more than 80 mph (129 km/h). The highest wind gusts recorded in the Republic of Ireland reached a speed of 83 mph (134 km/h) at Roches Point on the County Cork coast and 63 mph (101 km/h) at Magilligan. In February 2020, about a month after the impact of storm Brendan, Storm Ciara, called “Britain's “storm of the century,” brought more chaos as raging winds of up to a 100 mph (161 km/h) swept across the UK and northern Europe, causing widespread flooding and travel disruptions. Another storm named Gloria arrived in Spain and France. On January 20, 2020, this Mediterranean Storm unleashed its fury across Spain with high winds, heavy rainfall, and snow. The hardest-hit areas were Murcia, Valencia, Barcelona, and the Balearic Islands. It was reported that on January 18, 2020, Canada’s province of Newfoundland and Labrador was barraged by a massive winter blizzard. As a result of the storm, 21,000 homes were left without power and a state of emergency was declared in the province, banning all road travel except for disaster-related or other urgent needs. On social media, the storm was dubbed “snowmageddon,” as snowdrifts partially buried homes. The Canadian Armed Forces were dispatched to Newfoundland and Labrador to help with recovery from the historic blizzard. All of these incidents occurred due to the severe effects of climate change on our planet’s weather system. Urgent action to end climate change is desperately needed. A scientific study by Drs. Joseph Poore and Thomas Nemecek, published in the journal Science, reports that a vegan diet is the “single biggest measure that can be taken to reduce environmental pollution.”

Adopting the plant-based diet reversed her debilitating, mystery illness that had left her largely incapacitated for nineteen months. Regarding a plant-based diet, Tabitha wisely suggests, “Know your why” for going vegan. From personal experiences, she knows how many health benefits can come from the vegan diet and the immense impact to one’s life. Today we’ll further explore the causes, interconnections, and solutions for our planet’s public health and economic crises. In June 2020, the World Wide Fund for Nature (WWF) released a report entitled, “COVID-19: Urgent Call to Protect People and Nature,” urging governments, corporations, organizations, and the public to take action to restore our broken relationship with nature and thus avoid future pandemics involving zoonotic infections, defined by the report as “any diseases originating from animals and transmitted to humans.” Among the many suggested initiatives to be implemented, some to be applied by governments are: a) halt the high-risk wildlife trade and increase enforcement to combat the illicit wildlife trade; and b) introduce and enforce legislation and policy actions to eliminate deforestation and conversion from supply chains. “To talk about nature is to talk about our essence, is to talk about us. The forest, the leaves, nature, the wind, the rain – it is sacred. Everything is sacred. In my language, it's called, ‘u-tã’ -- everything is sacred. Nature and the indigenous people are the whole of harmony. The indigenous people cannot live without nature, without the river. The earth has life; it cries when it is destroyed.” Defined by The International Ecotourism Society as “responsible travel to natural areas that conserves the environment, sustains the well-being of the local people, and involves interpretation and education,” ecotourism could be part of the solution to our profits vs. planet issues. Countries such as Costa Rica, Ecuador, Kenya, Nepal, Madagascar, and regions like Antarctica already use ecotourism as an important economic activity. The WWF for Nature report also recommends “scaling up efforts to combat the trade of illegal and high-risk species at national and international levels.” Some organizations including The International Anti-Poaching Foundation and The Black Mambas Anti-Poaching Unit, both in Africa, are putting forth efforts to stop the illegal hunting and capturing of wild animals. And last but not least, some enterprises have virtually taken land use out of the equation. Watergen, Ô Amazon Air Water, Solar Foods, and Fairbrics are some of the innovative businesses using air as a primary source for the development of food, water, and even clothing – avoiding the devastation of forests and the conversion of natural ecosystems, as well as preventing contact with wild fauna carrying viruses not yet known to human beings.

After watching the documentary “What the Health” and becoming a vegan, Tabitha regained her health and positivity. As a woman of faith, Tabitha received the message to share what she was eating via videos, which she is still doing to this day, with great success as unexpected opportunities presented themselves. “But I honestly feel like, ever since I've been on this journey, it just started shinning brighter. I truly believe I’m on assignment. I started this journey to save my life, but now, I’m helping to save other people's and I think that's the amazing part of it, so it definitely brought my spirituality and my assignment together and I cannot deny that, and I love it.” Having been raised in a Christian family, Tabitha feels that eating vegan is what was intended for us, just like food from the Garden of Eden. “I believe that we are supposed to eat from the land, and I believe that eating from the land heals us. I know it healed me. I don't judge anybody for their belief, but you have to believe what your body tells you.” Since becoming a vegan, Tabitha’s spirituality has flourished.
