Melt two tablespoons (28 grams) of vegan butter in a pan and add stalk-trimmed button mushrooms (400 grams) and one teaspoon of sweet paprika. Cook for 6-8 minutes and add the halved cherry tomatoes (125 grams) and cook a further 3-4 minutes until tomatoes are warmed through. Then sprinkle over parsley, and season to taste with salt and pepper. Spoon the mushroom mixture on a couple of slices of thick toasted bread!
